Bachelor of Science Degree in Foods and Nutrition

Degree Overview:

   Lambuth University is now offering a Bachelor of Science degree in Foods and Nutrition with two concentration areas: 1) Foods and 2) Nutrition.


Concentration Option #1 – Foods

   The degree option with a concentration in Foods incorporates many of the current course offerings.  It includes new courses in Cultural Foods and Experimental Food Science.  It also includes business and management courses.  This degree option should properly prepare students to enter the food and restaurant industries in positions such as restaurant owner, restaurant manager, hospital or school foodservice manager, and food science and food technology positions in the food industry.

 

Concentration Option #2 – Nutrition

   The degree option with a concentration in Nutrition adds many new course offerings.  Nutrition courses include assessment, education, health promotion, metabolism, and medical nutrition therapy.  Foods courses include cultural foods and experimental food science.  Business/ management courses include food systems management, principles of management, and accounting. The goal is to use this concentration to apply for accreditation with the American Dietetic Association for a Didactic Program in Dietetics.

 

Definitions:

American Dietetic Association – a national organization for Dietetics Professionals.  A division of the ADA, the Commission on Accreditation for Dietetics Education (CADE), accredits dietetics programs at colleges and universities in the United States.  In order to become a Registered Dietitian (the most nationally recognized credential for nutrition professionals), students must complete an accredited dietetics education pathway, most commonly a Didactic Program in Dietetics (DPD) and a Dietetic Internship.  Lambuth University does not currently offer an accredited Didactic Program in Dietetics.

Didactic Program in Dietetics – a comprehensive program that provides both classroom and practical experiences in dietetics, the completion of which allows a student to enter a dietetic internship

Licensed Dietitian – credential granted at the state level; regulations vary by state (in TN, you must be a Registered Dietitian)

Registered Dietitian – a food and nutrition expert who has met academic and professional requirements; credential granted by the American Dietetic Association Commission on Dietetic Registration.
